150g Sweet Potato
100g Green Beans
1.1 tsp Extra Virgin Olive Oil

PREPARATION
Peel and cube the sweet potato and boil in water until tender, about 10-12 minutes.
Drain the sweet potato and mash with a fork until smooth, seasoning with a pinch of sea salt.
Steam the green beans for 4-5 minutes until they are bright green and crisp-tender.
Pat the salmon fillet dry with a paper towel and season with salt and pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat and sear the salmon skin-side down for 4-5 minutes.
Flip the salmon and cook for another 2-3 minutes until opaque and easily flaked.
