INGREDIENTS
6 oz Wild-Caught Salmon Fillet
400g Cauliflower Florets
200g Broccoli Florets
10g Ghee
2 cloves Garlic
PREPARATION
Place the cauliflower florets and garlic cloves in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
Transfer the steamed cauliflower and garlic to a food processor or blender, add half of the ghee and a pinch of salt, and process until smooth and creamy.
While the cauliflower cooks, steam the broccoli florets for 5-6 minutes until vibrant green and tender-crisp.
Pat the salmon fillet dry with a paper towel and season both sides with salt and black pepper.
Heat the remaining ghee in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side up and sear for 4 minutes until a golden crust forms, then flip and cook for another 3-4 minutes until cooked through.
Plate the garlic cauliflower mash alongside the steamed broccoli and top with the seared salmon fillet.
Serve immediately with an optional squeeze of fresh lemon juice.
