Sweet and Sour Pork Mince Stir-fry
Sautéed lean ground pork tossed with crisp bell peppers and juicy pineapple in a vibrant, honey-sweetened ginger sauce.
INGREDIENTS
6 oz Ground pork (93% lean)
0.5 tsp Toasted sesame oil
1 cup Cauliflower rice
0.5 cup Red bell pepper
0.5 cup Snap peas
0.25 cup Fresh pineapple chunks
1 tbsp Coconut aminos
1 tsp Rice vinegar
0.5 tsp Raw honey
1 tsp Fresh ginger
1 clove Garlic
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tbsp Green onion
PREPARATION
In a small bowl, whisk together the coconut aminos, rice vinegar, raw honey, grated fresh ginger, and minced garlic to create the sweet and sour sauce base.
Heat a large skillet over medium-high heat and add the ground pork, seasoning with sea salt and black pepper.
Cook the pork, breaking it into small crumbles with a wooden spoon, until browned and cooked through, then remove the pork from the pan and set aside.
In the same skillet, add the toasted sesame oil followed by the diced red bell pepper and snap peas, sautéing for 3-4 minutes until tender-crisp.
Add the cauliflower rice to the skillet and sauté for another 2 minutes until softened.
Return the cooked pork to the skillet and add the fresh pineapple chunks.
Pour the prepared sauce over the mixture and toss everything together for 1-2 minutes until the sauce thickens slightly and coats the ingredients.
Garnish with sliced green onions and serve immediately.
