Seared Salmon with Steamed Asparagus and Cauliflower Mash
Pan-seared salmon served over a creamy cauliflower mash with tender steamed asparagus, finished with a squeeze of bright, zesty lemon.
INGREDIENTS
4.5 oz Salmon Fillet
1 cup Cauliflower florets
5 Asparagus spears
0.5 tsp Ghee
Salt and black pepper to taste
Fresh lemon wedge
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very soft.
During the last 4 minutes of steaming the cauliflower, add the asparagus spears to the steamer basket.
While vegetables steam, pat the salmon dry with a paper towel and season both sides with salt and pepper.
Heat the ghee in a non-stick skillet over medium-high heat until shimmering.
Place the salmon in the pan skin-side up and sear for 4 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until cooked through to your preference.
Transfer the steamed cauliflower to a bowl and mash thoroughly with a fork or immersion blender until smooth, seasoning with salt and pepper.
Plate the cauliflower mash, top with the seared salmon, and serve alongside the steamed asparagus with a fresh lemon squeeze.
