INGREDIENTS
5.8 oz Wild Atlantic Salmon
2 cups Cauliflower florets
1 cup Green beans
2 tbsp Non-fat Greek yogurt
1 tbsp Extra virgin olive oil
2 cloves Garlic, minced
PREPARATION
Steam the cauliflower florets until very tender, approximately 10 to 12 minutes.
While the cauliflower is steaming, heat half of the olive oil in a large skillet over medium-high heat.
Season the salmon fillet with a pinch of salt and pepper, then place it in the skillet skin-side down.
Sear the salmon for 4 to 5 minutes until the skin is crispy, then flip and cook for another 2 to 3 minutes.
Remove the salmon from the pan and set aside to rest.
In the same skillet, add the remaining oil and sauté the green beans and minced garlic for 5 minutes until tender-crisp.
Drain the steamed cauliflower and blend or mash it with the Greek yogurt until smooth and creamy.
Serve the salmon over a bed of cauliflower mash with the garlic green beans on the side.
