7 oz Salmon Fillet
0.5 cup Cooked Brown Rice
1 cup Green Beans
1.5 tsp Olive Oil
1 clove Garlic
1 tsp Lemon Juice
PREPARATION
Prepare the brown rice according to package instructions or use pre-cooked rice.
Trim the ends of the green beans and mince the garlic clove.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Season the salmon with salt and pepper then place skin-side down in the hot pan.
Sear the salmon for 4-5 minutes until the skin is crispy then flip and cook for another 3 minutes.
Remove the salmon from the pan and set aside to rest.
Add the remaining olive oil to the same skillet and toss in the green beans.
Sauté the beans for 3-4 minutes then add the garlic and cook until fragrant.
Serve the salmon over the brown rice with the garlic green beans on the side and a squeeze of fresh lemon.
