Lightly grease the interior of a small slow cooker with ghee to prevent sticking.
In a medium mixing bowl, whisk together the eggs, cottage cheese, sea salt, black pepper, garlic powder, and smoked paprika until well combined.
Place the diced chicken breast, chopped spinach, bell pepper, and onion into the bottom of the slow cooker.
Pour the egg and cottage cheese mixture over the chicken and vegetables, stirring gently to ensure everything is evenly distributed.
Sprinkle the shredded cheddar cheese over the top of the mixture.
Cover and cook on low for 3 to 4 hours, or until the eggs are set and the chicken is cooked through.
Serve warm, garnished with fresh herbs if desired.
