Seared Shrimp and Broccoli with Garlic-Lime Sauce
Shrimp and broccoli florets seared in a zesty garlic-lime tamari sauce, served over nutty brown rice with a sprinkle of fresh cilantro.
INGREDIENTS
5.3 oz Raw Shrimp, peeled and deveined
1.5 cups Broccoli florets
0.75 cup Cooked Brown Rice
0.75 tbsp Avocado Oil
1 tbsp Tamari (Gluten-Free)
1 tsp Honey
1 tbsp Fresh Lime Juice
2 cloves Garlic, minced
PREPARATION
In a small bowl, whisk together the tamari, lime juice, honey, and minced garlic to create the sauce.
Heat half of the avocado oil in a large skillet over medium-high heat.
Add the broccoli florets and a splash of water, then cover and steam for 2-3 minutes until tender-crisp.
Remove the broccoli from the skillet and set aside.
Add the remaining oil to the same skillet and increase heat to high.
Pat the shrimp dry and add them to the skillet, searing for 1-2 minutes per side until pink and opaque.
Return the broccoli to the skillet and pour the sauce over the mixture.
Toss everything together for 1 minute until the sauce thickens slightly and coats the shrimp and vegetables.
Serve immediately over the warm cooked brown rice.
