INGREDIENTS
2 whole chicken drumsticks
1.5 cup asparagus
0.25 tbsp extra virgin olive oil
1 tsp lemon pepper seasoning
0.25 tsp sea salt
0.25 tsp garlic powder
1 tsp lemon juice
PREPARATION
Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Pat the chicken drumsticks dry with a paper towel to ensure the skin gets extra crispy during roasting.
In a small bowl, whisk together 0.5 tbsp of the olive oil, lemon pepper seasoning, garlic powder, and sea salt.
Brush the seasoning mixture evenly over all sides of the chicken drumsticks and place them on one side of the prepared baking sheet.
Roast the chicken in the oven for 15 minutes.
While the chicken is roasting, trim the woody ends off the asparagus and toss the spears with the remaining 0.25 tbsp olive oil.
Add the asparagus to the other side of the baking sheet and roast everything for another 15-20 minutes until the chicken reaches an internal temperature of 165°F.
