Seared Salmon Fillet with Roasted Sweet Potatoes and Garlic Green Beans
Pan-seared salmon served with caramelized sweet potato cubes and tender green beans sautéed with garlic for a crisp and vibrant finish.
INGREDIENTS
5.5 oz Atlantic Salmon Fillet
80g Sweet Potato, cubed
150g Fresh Green Beans
1 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Toss the cubed sweet potatoes with half of the olive oil and a pinch of sea salt, then roast for 20-25 minutes until tender and caramelized.
While the potatoes roast, heat a non-stick skillet over medium-high heat with the remaining oil.
Season the salmon fillet with salt and pepper, then sear skin-side down for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for another 3-4 minutes until it reaches your desired level of doneness, then remove from the pan to rest.
In the same skillet, add the green beans and a splash of water, covering for 2 minutes to steam-sauté.
Add the minced garlic to the green beans and sauté for 1 more minute until fragrant and the beans are bright green.
Plate the seared salmon alongside the roasted sweet potatoes and garlic green beans, finishing with a squeeze of fresh lemon if desired.
