Seared Salmon with Creamy Garlic Mashed Potatoes and Steamed Broccoli
Pan-seared salmon served alongside garlic-infused mashed potatoes and tender steamed broccoli, finished with a drizzle of silky olive oil.
INGREDIENTS
4 oz Salmon Fillet
200g Red Potatoes
150g Broccoli Florets
2 tbsp Nonfat Plain Greek Yogurt
1.5 tbsp Extra Virgin Olive Oil
2 Garlic Cloves
PREPARATION
Peel and chop the red potatoes into uniform chunks and place them in a pot of salted water.
Bring the water to a boil and cook the potatoes for about 15 minutes until they are fork-tender.
While the potatoes are boiling, place the broccoli florets in a steamer basket over simmering water and steam for 5-7 minutes until bright green.
Pat the salmon fillet dry with paper towels and season both sides with a pinch of salt and pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet and sear for 4-5 minutes per side until the exterior is golden and the fish flakes easily.
Drain the cooked potatoes and return them to the pot.
Add the Greek yogurt, minced garlic, and the remaining olive oil to the potatoes, then mash until creamy and smooth.
Serve the seared salmon over the garlic mashed potatoes with the steamed broccoli on the side.
