Seared Salmon with Herb Cauliflower Rice and Sautéed Green Beans
Pan-seared salmon served over a bed of herb-infused cauliflower rice with crisp sautéed green beans and a squeeze of bright lemon.
INGREDIENTS
6 ounces Salmon Fillet
1.5 cups Cauliflower Rice
1.5 cups Green Beans
1.5 tablespoons Avocado Oil
2 cloves Garlic, minced
1 tablespoon Lemon Juice
2 tablespoons Fresh Parsley, chopped
PREPARATION
Pat the salmon fillet dry with a paper towel and season with salt and pepper.
Heat half of the avocado oil in a non-stick skillet over medium-high heat.
Place the salmon skin-side down in the pan and sear for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for another 2-3 minutes until desired doneness is reached, then remove from the pan and set aside.
In the same skillet, add the remaining oil along with the minced garlic and sauté for 30 seconds until fragrant.
Add the green beans to the skillet and sauté for 5-6 minutes until tender-crisp.
Stir in the cauliflower rice and cook for an additional 3-4 minutes until heated through and slightly softened.
Remove the vegetables from heat and stir in the fresh parsley and lemon juice.
Serve the seared salmon over the herb cauliflower rice and green beans.
