Place the coated chicken onto the baking sheet, drizzle with olive oil, and bake for 15 minutes.
Remove from the oven, top each piece with the marinara sauce and shredded mozzarella cheese.
Return to the oven for an additional 5 minutes or until the cheese is bubbly and golden.
Serve the crispy chicken over a bed of lightly sautéed zucchini noodles.
