PREPARATION
Scrub the yellow potato and dice into small 1/2-inch cubes.
Heat the extra virgin olive oil in a large non-stick skillet over medium-high heat.
Add the diced potatoes to the skillet and cook for 8-10 minutes, stirring occasionally, until they are golden brown and tender.
Push the potatoes to one side of the pan and add the ground Italian turkey sausage, breaking it up with a wooden spoon.
Add the diced bell peppers and onions to the pan with the sausage.
