Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon served with tender steamed green beans and creamy garlic mashed cauliflower, finished with a squeeze of bright lemon.
INGREDIENTS
7 oz Wild Atlantic Salmon
1 cup Green Beans
2 cups Cauliflower florets
2 cloves Garlic, minced
1 tbsp Extra Virgin Olive Oil
1/2 Fresh Lemon
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until they are very tender, approximately 10 to 12 minutes.
While the cauliflower is steaming, place the green beans in a separate steamer or add them to the same basket for the last 5 to 7 minutes until they are bright green and crisp-tender.
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat half of the olive oil in a non-stick or cast-iron skillet over medium-high heat.
Place the salmon in the pan skin-side up and sear for 4 to 5 minutes until a golden crust forms, then flip and cook for another 3 to 4 minutes until the fish is opaque and flakes easily.
Transfer the steamed cauliflower to a bowl or food processor, add the minced garlic and the remaining olive oil, and mash or blend until the texture is creamy and smooth.
Plate the garlic mashed cauliflower, top with the seared salmon, and serve the steamed green beans on the side with a fresh squeeze of lemon juice over everything.
