Seared Salmon Fillet with Steamed Green Beans and Garlic Cauliflower Mash
Pan-seared salmon served over garlic cauliflower mash and steamed green beans with a velvety smooth finish.
INGREDIENTS
6.8 oz Salmon Fillet
2 cups Cauliflower Florets
1 cup Green Beans
1 tbsp Nonfat Greek Yogurt
1 clove Garlic
1.5 tsp Olive Oil
PREPARATION
Bring a pot of water to a boil and steam the cauliflower florets for 10-12 minutes until very soft.
Steam the green beans in a separate basket for 5-6 minutes until they are bright green and crisp-tender.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat with the olive oil.
Sear the salmon skin-side down for 4-5 minutes, then flip and cook for another 3 minutes until golden.
Drain the steamed cauliflower and blend with the Greek yogurt and minced garlic until smooth and creamy.
Plate the garlic cauliflower mash, top with the seared salmon, and serve alongside the green beans.
