Ginger-Garlic Tofu Fried Rice
Crispy tofu and vibrant edamame stir-fried with aromatic ginger and garlic for a protein-packed bowl that delivers a satisfying crunch in every bite.
INGREDIENTS
10 oz extra firm tofu
0.75 cup shelled edamame
1 large egg
1 cup cauliflower rice
1 tbsp tamari
1 tsp toasted sesame oil
1 tbsp fresh ginger
2 cloves garlic
2 medium green onions
0.25 tsp sea salt
0.25 tsp black pepper
PREPARATION
Press the extra firm tofu for at least 15 minutes to remove excess moisture then cut into small half-inch cubes.
Heat a large non-stick skillet or wok over medium-high heat and add half of the toasted sesame oil.
Add the tofu cubes to the hot skillet and cook until golden brown and crispy on all sides which takes about 8 to 10 minutes.
Push the tofu to one side of the pan and add the remaining sesame oil along with the minced ginger garlic and the white parts of the sliced green onions.
Sauté the aromatics for 1 minute until fragrant then stir in the cauliflower rice and shelled edamame.
Cook the mixture for 3 to 5 minutes until the cauliflower rice is tender but still holds a slight bite.
Create a small well in the center of the pan crack the egg into it and scramble until just set before tossing it into the rest of the mixture.
Drizzle with tamari season with sea salt and black pepper and garnish with the green parts of the scallions before serving hot.
