7 oz Wild Atlantic Salmon Fillet
120g Sweet Potato, peeled and cubed
100g Fresh Green Beans, trimmed
1.5 tsp Avocado Oil
1 clove Garlic, minced

PREPARATION
Place the cubed sweet potato in a pot of boiling water and cook for 10-12 minutes until tender.
Drain the potatoes and mash them until smooth, adding a pinch of sea salt for flavor.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat one teaspoon of avocado oil in a skillet over medium-high heat.
Place the salmon in the pan and sear for 4-5 minutes until a golden crust forms, then flip and cook for another 3 minutes.
Remove the salmon from the pan and set aside to rest.
