6 oz Salmon Fillet
1.5 cups Cauliflower florets
1 cup Green beans
2 oz Non-fat Greek Yogurt
1 tsp Olive oil
1 clove Garlic
PREPARATION
Place the cauliflower florets and the peeled garlic clove in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
Add the green beans to the steamer during the last 5 minutes of cooking until they are bright green and crisp-tender.
Transfer the steamed cauliflower and garlic to a bowl, add the Greek yogurt, and mash until smooth and creamy, seasoning with a pinch of salt and pepper.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side up and sear for 4-5 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until cooked through to your preference.
