Seared Salmon with Roasted Broccoli and Garlic Mashed Cauliflower
Pan-seared salmon served with roasted broccoli and garlic cauliflower mash, finished with a squeeze of bright lemon.
INGREDIENTS
7 ounces Wild Atlantic Salmon Fillet
1.5 cups Broccoli Florets
1.5 cups Cauliflower Florets
2 teaspoons Extra Virgin Olive Oil
1 clove Garlic, minced
PREPARATION
Preheat your oven to 400°F (200°C).
Toss the broccoli florets with one teaspoon of olive oil and a pinch of sea salt on a large rimmed baking sheet.
Roast the broccoli for 15-20 minutes until the edges are tender and slightly charred.
While the broccoli roasts, place the cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very soft.
Drain the cauliflower thoroughly and mash with the minced garlic and a pinch of salt using a potato masher or food processor until creamy.
Pat the salmon fillet dry with paper towels and season both sides with salt and black pepper.
Heat the remaining teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4-5 minutes until the skin is crispy.
Flip the salmon carefully and cook for an additional 2-3 minutes until the fish is opaque and flakes easily with a fork.
Serve the seared salmon alongside the roasted broccoli and garlic cauliflower mash, finishing with a squeeze of fresh lemon juice if desired.
