PREPARATION
Heat the olive oil in a non-stick skillet over medium heat.
Add the fresh spinach to the skillet and sauté until just wilted, then remove and set aside.
Pour the egg whites into the same skillet, spreading them evenly across the bottom.
Once the edges of the egg whites begin to set, place the sautéed spinach and cottage cheese on one half of the omelette.
Carefully fold the other half of the egg whites over the filling and cook for another minute until the cottage cheese is warm.
