Pan Seared Salmon with Steamed Broccoli and Cauliflower Mash
Pan-seared salmon fillet served over creamy cauliflower mash with tender steamed broccoli, finished with a squeeze of zesty lemon.
INGREDIENTS
6.5 oz Wild Atlantic Salmon
1 cup Broccoli florets
1.5 cups Cauliflower florets
2 tbsp Nonfat Greek Yogurt
0.5 tsp Olive Oil
1 tsp Lemon Juice
Pinch of Garlic Powder, Salt, and Pepper
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water for 10-12 minutes until very soft.
Transfer the steamed cauliflower to a food processor or bowl and blend with Greek yogurt, garlic powder, salt, and pepper until a smooth mash forms.
Steam the broccoli florets for 5-6 minutes until they are bright green and tender-crisp.
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down (if applicable) and sear for 4-5 minutes until the skin is crisp, then flip and cook for another 3-4 minutes until cooked through.
Serve the salmon over the cauliflower mash with the steamed broccoli on the side and a fresh squeeze of lemon juice.
