6 oz Wild Atlantic Salmon Fillet
2 cups Cauliflower Florets
1 cup Green Beans
1 tsp Extra Virgin Olive Oil
1 tsp Ghee
1 clove Garlic
Pinch of Sea Salt and Black Pepper
PREPARATION
Place the cauliflower florets and peeled garlic clove in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
While cauliflower steams, add the green beans to the steamer for the last 5 minutes of cooking until they are bright green and crisp-tender.
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side up and sear for 4-5 minutes until a golden crust forms, then flip and cook for another 3-4 minutes until cooked through.
Transfer the steamed cauliflower and garlic to a blender or food processor, add the ghee and a pinch of salt, and process until smooth and creamy.
Serve the seared salmon over the garlic cauliflower mash with the steamed green beans on the side.
