Classic Baked Ziti with Ricotta
Tender whole wheat ziti tossed with lean ground turkey and a bright tomato sauce, layered with creamy ricotta and finished with a golden, bubbly cheese crust.
INGREDIENTS
5 oz ground turkey
1 oz whole wheat ziti pasta
2 tbsp part-skim ricotta cheese
2 tbsp part-skim shredded mozzarella cheese
1 tbsp grated parmesan cheese
0.5 cup tomato puree
1 cup fresh spinach
0.25 cup diced yellow onion
1 clove minced garlic
0.5 tsp dried oregano
0.25 tsp sea salt
0.25 tsp black pepper
1 tsp olive oil
PREPARATION
Preheat your oven to 375°F (190°C).
Cook the whole wheat ziti in a pot of boiling water until al dente, then drain and set aside.
Heat the olive oil in a skillet over medium heat and sauté the diced onion and minced garlic until translucent and fragrant.
Add the ground turkey to the skillet, seasoning with sea salt, black pepper, and dried oregano, and cook until fully browned.
Stir in the tomato puree and fresh spinach, simmering for 2-3 minutes until the spinach has wilted into the sauce.
In a small bowl, stir together the ricotta cheese and half of the parmesan cheese.
Combine the cooked pasta with the turkey and tomato sauce mixture in the skillet.
Transfer half of the pasta mixture into a small oven-safe baking dish, dollop the ricotta mixture evenly over the top, then cover with the remaining pasta.
Sprinkle the shredded mozzarella and the remaining parmesan cheese over the top.
Bake for 15-20 minutes until the cheese is melted and the edges are bubbling.
