Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon served with garlic-sautéed green beans and sweet potato mash, finished with a squeeze of zesty lemon.
INGREDIENTS
6.8 oz Wild Sockeye Salmon Fillet
150g Sweet Potato
1 cup Fresh Green Beans
1 tsp Extra Virgin Olive Oil
1 clove Garlic
PREPARATION
Steam or microwave the sweet potato until soft, then peel and mash until creamy.
Heat half of the olive oil in a skillet over medium heat and sauté the green beans with minced garlic until tender-crisp.
Season the salmon fillet with salt and pepper.
Wipe the skillet, add the remaining olive oil, and sear the salmon for 4-5 minutes per side until the edges are golden and the skin is crispy.
Serve the salmon over the sweet potato mash with the green beans on the side and a fresh lemon wedge.
