Seared Salmon with Steamed Green Beans and Garlic Cauliflower Mash
Pan-seared salmon served over a velvety garlic cauliflower mash with fresh steamed green beans and a squeeze of bright lemon.
INGREDIENTS
6 ounces Wild Atlantic Salmon Fillet
2 cups Cauliflower Florets
1 cup Green Beans
2 teaspoons Extra Virgin Olive Oil
1 clove Garlic
1/4 teaspoon Sea Salt
1/4 teaspoon Black Pepper
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until very tender, about 10 to 12 minutes.
While the cauliflower steams, trim the ends of the green beans and steam them in a separate basket for 5 to 7 minutes until bright green and crisp-tender.
Pat the salmon fillet completely dry with paper towels and season both sides with half of the salt and pepper.
Heat one teaspoon of olive oil in a non-stick skillet over medium-high heat until shimmering.
Place the salmon in the pan skin-side up and sear for 4 to 5 minutes until a golden-brown crust forms.
Flip the salmon carefully and cook for another 3 to 4 minutes until the fish is opaque and flakes easily with a fork.
Drain the steamed cauliflower and transfer it to a food processor or blender with the remaining olive oil, minced garlic, and the rest of the salt and pepper.
Pulse the cauliflower until it reaches a smooth and creamy consistency.
Plate the salmon over a generous bed of the garlic cauliflower mash and serve with the steamed green beans on the side.
