Pan-Seared Steak with Garlic Butter
Pan-seared sirloin basted in a fragrant garlic-herb ghee, served with crisp-tender asparagus and earthy sautéed mushrooms for a savory finish.
INGREDIENTS
6 oz Grass-fed sirloin steak
1 tbsp Ghee
1 tsp Avocado oil
2 cloves Garlic
1 sprig Fresh rosemary
1 cup Asparagus spears
0.5 cup Sliced cremini mushrooms
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Pat the steak dry with paper towels and season both sides with sea salt and black pepper.
Heat a cast-iron skillet over medium-high heat with avocado oil until shimmering.
Place the steak in the hot skillet and sear for 3-4 minutes until a deep golden crust forms.
Flip the steak and add the ghee, smashed garlic cloves, and rosemary sprig to the pan.
Tilt the pan and continuously spoon the melting garlic-herb ghee over the steak for another 3 minutes for medium-rare.
Remove the steak to a plate and let it rest for 5 minutes.
In the same skillet, toss the asparagus and mushrooms in the remaining pan juices, sautéing for 4-5 minutes until tender.
Slice the steak against the grain and serve alongside the vegetables.
