3 slices Turkey Bacon
1/4 cup Low-Fat Cottage Cheese
1 cup Fresh Spinach
1/2 cup chopped Red Bell Pepper
1 tsp Avocado Oil
1/4 Fresh Avocado
2 tbsp diced Yellow Onion
PREPARATION
Place the turkey bacon in a cold non-stick skillet and turn the heat to medium, cooking until the edges are golden and crispy.
Remove the bacon and set aside, then add the avocado oil to the same skillet.
Sauté the diced onions and red bell peppers for 3-4 minutes until softened.
Add the fresh spinach to the skillet and toss until just wilted, then remove all vegetables and set aside.
Wipe the skillet clean if needed and pour in the liquid egg whites over medium-low heat.
Once the egg whites are mostly set, spread the sautéed vegetables and cottage cheese over one half of the omelette.
