INGREDIENTS
6 oz Salmon Fillet
300g Cauliflower Florets
150g Green Beans
1 tsp Olive Oil
1 clove Garlic
2 tbsp Non-fat Greek Yogurt
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
Add the green beans to the steamer during the last 5 minutes of the cauliflower cooking time until they are bright green and crisp-tender.
Transfer the steamed cauliflower to a bowl or food processor, add the minced garlic and Greek yogurt, and blend or mash until smooth and creamy.
Pat the salmon fillet dry with paper towels and season both sides with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4-5 minutes on the first side until a golden crust forms.
Flip the salmon and cook for another 2-3 minutes until cooked through to your preference.
Serve the seared salmon over the garlic mashed cauliflower with the steamed green beans on the side.
