Seared Salmon with Garlic Green Beans and Mashed Cauliflower
Pan-seared salmon served over creamy mashed cauliflower and garlic-sautéed green beans, finished with a squeeze of bright, zesty lemon.
INGREDIENTS
7 oz Wild Atlantic Salmon
1.5 cups Cauliflower florets
1 cup Green Beans
1 tbsp Extra Virgin Olive Oil
2 cloves Garlic, minced
2 tbsp Unsweetened Almond Milk
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until very tender, approximately 10 to 12 minutes.
While the cauliflower steams, pat the salmon dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat half of the olive oil in a large non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side up and sear for 4 to 5 minutes until a golden crust forms, then flip and cook for another 3 to 4 minutes until cooked through.
Remove the salmon from the pan and set aside to rest.
In the same skillet, add a teaspoon of olive oil and sauté the green beans and minced garlic for 5 minutes until the beans are tender-crisp and the garlic is fragrant.
Drain the steamed cauliflower and transfer to a blender or food processor with the almond milk, remaining olive oil, and salt.
Pulse until the cauliflower reaches a smooth, creamy consistency.
Serve the seared salmon over a bed of mashed cauliflower with the garlic green beans on the side.
