Garlic Herb Butter Pan-Seared Steak
Grass-fed steak pan-seared to a juicy finish and basted with aromatic garlic-herb ghee, served alongside crisp-tender asparagus and blistered tomatoes.
INGREDIENTS
4.75 oz sirloin steak
0.5 tbsp ghee
2 cloves garlic
1 sprig fresh rosemary
1 sprig fresh thyme
1.5 cups asparagus
0.5 cup cherry tomatoes
0.25 tsp sea salt
0.25 tsp black pepper
PREPARATION
Pat the steak dry with paper towels and season both sides with sea salt and black pepper.
Heat a cast-iron skillet over medium-high heat until very hot, then sear the steak for 3-4 minutes per side.
Lower the heat to medium and add the ghee, smashed garlic cloves, rosemary, and thyme to the pan.
Tilt the skillet and spoon the melted herb-infused ghee over the steak repeatedly for 2 minutes.
Transfer the steak to a cutting board and allow it to rest for at least 5 minutes.
Sauté the asparagus and cherry tomatoes in the remaining pan juices until the vegetables are tender and the tomatoes blister.
Slice the steak against the grain and serve immediately with the vegetables.
