Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon served over a smooth sweet potato mash with green beans sautéed in fragrant garlic.
INGREDIENTS
5.3 oz Salmon Fillet
80g Sweet Potato, cubed
100g Fresh Green Beans
1 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
PREPARATION
Peel and cube the sweet potato, then boil in a pot of water for 10-12 minutes until fork-tender.
Drain the sweet potatoes and mash them in a bowl until smooth, adding a pinch of sea salt if desired.
Pat the salmon fillet dry with a paper towel and season the flesh side with a touch of salt.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4-5 minutes per side until the exterior is golden and the fish flakes easily.
Remove the salmon from the pan and set aside.
Add the remaining olive oil to the same skillet along with the minced garlic and green beans.
Sauté the green beans for 3-5 minutes until they are bright green and crisp-tender.
Plate the sweet potato mash, top with the seared salmon, and serve the garlic green beans on the side.
