PREPARATION
Preheat your oven to 400°F. Slice the top off the garlic head to expose the cloves, drizzle with olive oil, wrap tightly in foil, and roast for 35 minutes until softened.
While the garlic roasts, chop the cauliflower into florets and steam them over boiling water for 10-12 minutes until very tender.
Season the chicken breast with dried thyme, half of the sea salt, and half of the black pepper.
Heat the ghee in a skillet over medium-high heat and sear the chicken for 6-7 minutes per side until the internal temperature reaches 165°F.
