Classic Baked Ziti with Ricotta
Whole wheat ziti tossed with lean ground turkey and zesty marinara, baked under a layer of creamy ricotta and bubbly melted mozzarella.
INGREDIENTS
1.5 oz whole wheat ziti
4 oz lean ground turkey
0.5 cup sugar-free marinara sauce
0.25 cup part-skim ricotta cheese
0.5 oz shredded part-skim mozzarella cheese
1 cup fresh baby spinach
1 tsp extra virgin olive oil
1 clove garlic
0.25 tsp dried oregano
0.25 tsp sea salt
0.25 tsp black pepper
PREPARATION
Preheat your oven to 375°F (190°C) and lightly grease a small oven-safe baking dish.
Bring a pot of salted water to a boil and cook the whole wheat ziti until al dente, then drain and set aside.
In a large skillet, heat the olive oil over medium heat and sauté the minced garlic for 30 seconds until fragrant.
Add the ground turkey to the skillet, seasoning with sea salt, black pepper, and dried oregano, and cook until browned and crumbled.
Stir the fresh baby spinach into the turkey mixture until just wilted, then remove from heat.
In a mixing bowl, combine the cooked ziti, the turkey and spinach mixture, and the marinara sauce until well coated.
Transfer the pasta mixture into the prepared baking dish and dollop the ricotta cheese evenly over the top.
Sprinkle with the shredded mozzarella and bake for 15-20 minutes until the cheese is melted and the edges are golden.
