Seared Salmon Fillet with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon served alongside garlic cauliflower mash and steamed green beans, finished with a squeeze of lemon for a bright, zesty zing.
INGREDIENTS
7 ounces Salmon Fillet
2 cups Cauliflower florets
1 cup Green beans
2 teaspoons Ghee
2 cloves Garlic, minced
Salt, pepper, and lemon wedges
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and cook for 10-12 minutes until very soft.
Add the green beans to the steamer basket during the last 5 minutes of cooking until they are crisp-tender.
Transfer the steamed cauliflower to a food processor or bowl with one teaspoon of ghee and the minced garlic, then blend or mash until smooth and creamy.
Season the cauliflower mash with salt and pepper to taste.
Pat the salmon fillet dry with a paper towel and season both sides with salt and black pepper.
Heat the remaining teaspoon of ghee in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4-5 minutes until the skin is crispy, then flip and cook for another 2-3 minutes until desired doneness.
Serve the seared salmon over the garlic cauliflower mash with the steamed green beans on the side and a fresh lemon wedge.
