INGREDIENTS
6 oz Sirloin steak
1 tbsp Ghee
2 whole Garlic cloves
1 sprig Fresh rosemary
1 sprig Fresh thyme
1 cup Asparagus spears
0.5 cup Cherry tomatoes
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Pat the steak dry with paper towels and season both sides with sea salt and black pepper.
Heat a cast-iron skillet over medium-high heat until very hot, then add half of the ghee.
Place the steak in the skillet and sear for 3-4 minutes per side for medium-rare.
During the last 2 minutes of cooking, add the remaining ghee, smashed garlic cloves, rosemary, and thyme to the pan.
Tilt the pan and use a spoon to continuously baste the steak with the melting herb ghee.
Remove the steak to a plate and let it rest for 5 minutes.
In the same skillet, toss in the asparagus and cherry tomatoes, sautéing for 3-5 minutes until the asparagus is tender and tomatoes are blistered.
Slice the steak against the grain and serve immediately with the roasted vegetables.
