Whole wheat pasta and lean turkey baked in a rich marinara sauce with dollops of creamy ricotta and melted mozzarella for a bubbly, comforting finish.
INGREDIENTS
4 oz ground turkey
1.25 oz whole wheat ziti pasta
0.25 cup part-skim ricotta cheese
1 oz part-skim mozzarella cheese
0.5 cup marinara sauce
1 cup baby spinach
0.25 cup yellow onion
1 clove garlic
0.25 tsp dried oregano
0.25 tsp sea salt
0.25 tsp black pepper
1 tsp olive oil
PREPARATION
Preheat oven to 375°F.
Boil a pot of salted water and cook the whole wheat ziti according to package directions until al dente.
In a large skillet, heat the olive oil over medium heat and sauté the diced onion and minced garlic until fragrant.
Add the ground turkey to the skillet, seasoning with salt, pepper, and oregano, and cook until browned and crumbled.
Stir in the fresh baby spinach until wilted, then pour in the marinara sauce and simmer for 2 minutes.
Drain the pasta and toss it into the skillet with the turkey and sauce mixture.
Transfer half the mixture to a small baking dish, dollop with the ricotta cheese, then top with the remaining pasta mixture.
Sprinkle the mozzarella cheese over the top and bake for 15-20 minutes until the cheese is melted and golden.
