Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon fillet served alongside tender steamed green beans and creamy garlic mashed cauliflower, finished with a bright squeeze of lemon and a sprinkle of flaky sea salt.
INGREDIENTS
5.5 oz Salmon Fillet
250g Cauliflower florets
100g Green beans
1 tsp Olive oil
1 tsp Ghee
1 clove Garlic
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until very tender, about 10 to 12 minutes.
While the cauliflower steams, pat the salmon fillet dry with a paper towel and season both sides with salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4 to 5 minutes per side until the skin is crisp and the flesh is cooked through.
Steam the green beans in a separate basket or a small amount of water for 4 to 5 minutes until they are bright green and tender-crisp.
Drain the steamed cauliflower thoroughly and place it in a food processor or bowl with the ghee, minced garlic, and a pinch of salt.
Process or mash the cauliflower until it reaches a smooth and creamy consistency.
Plate the salmon fillet over a generous bed of the garlic mashed cauliflower and serve the steamed green beans on the side.
