Preheat your oven to 400°F and line a large baking sheet with parchment paper.
In a large mixing bowl, combine the Greek yogurt, all-purpose flour, nutritional yeast, baking powder, and 0.5 teaspoon of the garlic powder.
Stir until a thick dough forms, then turn it out onto a lightly floured surface and knead for 2 minutes until smooth and elastic.
Divide the dough into 4 equal portions, roll each into a long rope, and cut into 1-inch bite-sized pieces.
Place the bites on the prepared baking sheet, whisk the egg white in a small bowl, and brush it generously over the top of each bite.
Bake for 12 to 15 minutes or until the pretzel bites are puffed and turn a deep golden brown.
While warm, place the bites in a bowl and toss with the grated Parmesan cheese, the remaining 0.5 teaspoon of garlic powder, sea salt, and dried parsley until evenly coated.
