6 oz Wild Atlantic Salmon
3 cups Cauliflower florets
100g Green Beans
1 tsp Extra Virgin Olive Oil
1 tsp Ghee
1 clove Garlic, minced
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
While cauliflower steams, trim the ends of the green beans and steam them in a separate basket for 5-7 minutes until bright green and crisp-tender.
Transfer the steamed cauliflower to a bowl or food processor, add the ghee, minced garlic, and a pinch of salt, then mash or blend until creamy.
Pat the salmon fillet dry with a paper towel and season both sides with salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side down and sear for 4-5 minutes until the skin is crispy.
Flip the salmon carefully and cook for another 2-3 minutes until the fish is opaque and flakes easily with a fork.
