Seared Salmon Fillet with Garlic Green Beans and Mashed Cauliflower
Pan-seared salmon served with buttery mashed cauliflower and fresh green beans sautéed with garlic for a fragrant, golden finish.
INGREDIENTS
6 ounces Wild Atlantic Salmon
3 cups Cauliflower florets
1.5 cups Green beans
1 tablespoon Ghee
2 cloves Garlic, minced
PREPARATION
Place the cauliflower florets in a steamer basket over boiling water and cook until very tender, approximately 10 to 12 minutes.
Transfer the steamed cauliflower to a food processor or use a hand masher, adding half of the ghee and a pinch of sea salt, then blend until creamy and smooth.
Season the salmon fillet with salt and pepper on both sides while the cauliflower cooks.
Heat a large non-stick skillet over medium-high heat with the remaining ghee.
Place the salmon in the pan skin-side up and sear for 4 to 5 minutes until a golden crust forms, then flip and cook for another 3 minutes or until desired doneness.
Remove the salmon from the pan and set aside to rest.
In the same skillet, add the green beans and minced garlic, sautéing for 5 minutes until the beans are tender-crisp and the garlic is fragrant.
Serve the salmon over a bed of cauliflower mash with the garlic green beans on the side.
