PREPARATION
Whisk the egg whites in a small bowl until slightly frothy.
In a non-stick skillet over medium heat, add the olive oil and brown the turkey sausage until fully cooked.
Add the spinach to the skillet and sauté until just wilted, then remove the sausage and spinach and set aside.
Wipe the skillet if needed and pour in the egg whites, cooking undisturbed until the edges begin to set.
