Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared wild salmon served over creamy garlic-infused cauliflower mash with a side of tender-crisp green beans and a squeeze of bright lemon.
INGREDIENTS
6 ounces Wild Sockeye Salmon
1.5 cups Cauliflower florets
1.5 cups Green beans
3 tablespoons Nonfat Greek Yogurt
1 tablespoon Extra Virgin Olive Oil
2 cloves Garlic, minced
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very soft.
In the last 5 minutes of steaming the cauliflower, add the green beans to the steamer basket to cook until tender-crisp.
Transfer the steamed cauliflower to a food processor or bowl, adding the Greek yogurt, minced garlic, and a pinch of salt and pepper.
Blend or mash the cauliflower until smooth and creamy, then set aside and keep warm.
Heat the olive oil in a non-stick skillet over medium-high heat.
Season the salmon with salt and pepper, then place in the hot skillet skin-side down.
Sear the salmon for 4-5 minutes until the skin is crispy, then flip and cook for another 2-3 minutes until the desired doneness is reached.
Serve the seared salmon over the garlic mashed cauliflower with the steamed green beans on the side.
