PREPARATION
Heat a large non-stick skillet over medium-low heat and melt 0.5 tsp of the ghee.
Place two slices of bread in the pan, topping each with half of the cheddar, half of the mozzarella, and half of the turkey.
Layer the baby spinach onto one of the loaded slices and season both slices with sea salt and black pepper.
