Lean Beef Stir-Fry with Bell Peppers and Brown Rice
Lean beef and colorful bell peppers flash-seared in a ginger-garlic sauce, served over nutty brown rice with a finishing touch of toasted sesame oil.
INGREDIENTS
5.5 oz Top Sirloin Steak, thinly sliced
1/2 cup Cooked Brown Rice
1 cup Mixed Bell Peppers, sliced
1/2 cup Broccoli Florets
1 tsp Sesame Oil
1 tbsp Coconut Aminos
1 clove Garlic, minced
1 tsp Fresh Ginger, grated
PREPARATION
Prepare the brown rice according to package instructions and set aside.
Thinly slice the top sirloin against the grain into bite-sized strips.
Heat a large skillet or wok over medium-high heat and add the sesame oil.
Add the beef strips to the hot pan and sear until browned, about 2-3 minutes, then remove beef from the pan and set aside.
In the same pan, add the sliced bell peppers, broccoli, minced garlic, and grated ginger, sautéing for 3-4 minutes until the vegetables are tender-crisp.
Return the beef to the pan and pour in the coconut aminos, tossing everything together for 1 minute to glaze.
Serve the beef and vegetable stir-fry immediately over the warm brown rice.
