Preheat your oven to 375°F (190°C).
Finely mince the garlic clove.
In a small oven-safe skillet or 8-inch baking dish, heat the extra virgin olive oil over medium heat.
Add the minced garlic and sauté for 30 seconds until fragrant, then add the fresh baby spinach.
Sauté the spinach until just wilted, which should take about 1-2 minutes.
Spread the wilted spinach evenly across the bottom of the skillet or dish.
Pour the liquid egg whites directly over the spinach base.
Carefully crack the 4 whole eggs on top of the egg whites, spacing them evenly to ensure even cooking.
Sprinkle the sea salt, black pepper, and red pepper flakes over the eggs.
Crumble the feta cheese evenly over the top of the entire dish.
Transfer the skillet to the oven and bake for 10-12 minutes, or until the egg whites are fully set but the yolks remain slightly soft.
Remove from the oven and let the dish rest for 1 minute before serving warm.
