150g Sweet Potato
100g Green Beans
1 tablespoon Olive Oil
1 teaspoon Grass-fed Butter
2 cloves Garlic, minced
PREPARATION
Peel and dice the sweet potato into small, even cubes.
Place the sweet potato in a pot of boiling water and cook for 10-12 minutes until fork-tender.
Drain the water and mash the sweet potato with the grass-fed butter and a pinch of salt until smooth and creamy.
Pat the salmon fillet dry with a paper towel and season both sides with salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4-5 minutes until the skin is crispy and golden.
Carefully flip the salmon and cook for another 2-3 minutes until the fish is opaque and flakes easily.
Remove the salmon from the pan and set it aside to rest.
In the same pan, add the trimmed green beans and minced garlic, sautéing for 4-5 minutes until they are bright green and snap-tender.
