Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon served over creamy mashed sweet potatoes and garlicky green beans, finished with a squeeze of fresh lemon for a bright, zesty touch.
INGREDIENTS
5.8 oz Wild Atlantic Salmon Fillet
150g Sweet Potato
100g Fresh Green Beans
1 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
1 wedge Lemon
PREPARATION
Peel and dice the sweet potato, then steam or boil until completely tender.
Mash the sweet potato with a fork until smooth, seasoning with a pinch of sea salt if desired.
Pat the salmon fillet dry with a paper towel and season both sides with salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4-5 minutes until the skin is crisp.
Flip the salmon and cook for another 3-4 minutes until the center is just opaque.
Remove the salmon from the pan and set aside to rest.
In the same skillet, add the remaining olive oil, minced garlic, and green beans.
Sauté the green beans for 5-7 minutes until they are tender-crisp and slightly charred.
Plate the sweet potato mash, top with the seared salmon, and serve with the garlic green beans and a fresh squeeze of lemon juice.
