Ground Beef Stuffed Bell Peppers
Vibrant bell peppers roasted until tender and filled with a savory, herb-infused ground beef mixture for a satisfying and wholesome meal.
INGREDIENTS
4 oz Ground beef
2 medium Bell peppers
0.5 cup Nonfat Greek yogurt
0.25 cup Tomato sauce
0.25 tbsp Extra virgin olive oil
0.25 cup Yellow onion
1 clove Garlic
0.5 tsp Dried oregano
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Preheat your oven to 375°F (190°C).
Slice the bell peppers in half lengthwise and remove the seeds and membranes.
In a large skillet over medium heat, add the olive oil and sauté the diced yellow onion until translucent, about 5 minutes.
Add the minced garlic and cook for another 60 seconds until fragrant.
Add the ground beef to the skillet, breaking it up with a wooden spoon, and cook until browned and fully cooked through.
Stir in the tomato sauce, dried oregano, sea salt, and black pepper, allowing the mixture to simmer for 2-3 minutes to meld the flavors.
Place the bell pepper halves cut-side up in a baking dish and spoon the beef mixture evenly into each pepper.
Cover the dish with foil and bake for 25-30 minutes, or until the peppers are tender when pierced with a fork.
Remove from the oven and serve each pepper half with a generous dollop of nonfat Greek yogurt as a clean-eating alternative to sour cream.
