Seared Salmon Fillet with Garlic Green Beans and Sweet Potato Mash
Pan-seared wild salmon served over a creamy sweet potato mash with garlic-sautéed green beans, finished with a squeeze of fresh lemon and flaky sea salt.
INGREDIENTS
6.35 oz Wild Coho Salmon
120g Sweet Potato
100g Green Beans
1 tsp Ghee
2 cloves Garlic
PREPARATION
Peel and cube the sweet potato, then boil in salted water until tender, about 12-15 minutes.
Drain the potatoes and mash until smooth, seasoning with a pinch of salt and pepper.
Heat half the ghee in a skillet over medium-high heat and sear the salmon skin-side down for 4 minutes.
Flip the salmon and cook for another 3 minutes until opaque and easily flaked with a fork.
In a separate pan, sauté the green beans and minced garlic in the remaining ghee until crisp-tender.
Plate the mash first, top with the salmon fillet, and serve the green beans on the side.
